Another working week begins and today was the beginning of a busy few days ahead. After the last 2 weeks of almost nothing to do at work, today just flew by! I enjoy being busy; the busier, the better. Sometimes it is nice to have some down time and have a breather, but when that downtime lasts for nearly 2 weeks, well, let’s just say I was well and truly over it!
The Australian Open tennis started today and a great fightback from Bernard Tomic secured him a win in 5 sets against Fernando Verdasco, coming back from 2 sets down to win the next 3 in a marathon match that lasted 4 hours and 11 minutes. Looking forward to more great tennis over the next 2 weeks.
Had delicious slow cooked steak for dinner tonight. Rump steak pieces, tinned tomatoes, onion and beef stock, then slow cooked for 16 hours. Served with potato and sweet potato mash. Very tender. I am thinking about a chicken dish for tomorrow night. Warm lemon and ginger chicken salad. Mmmm mmmm.
To all those people out there, fighting to survive, stay strong and believe in yourself. Make yourself the priority and let others take the burden for you. Love and blessings to all.
